Crumble the yeast and dissolve it in part of the water. Put all the rest of the ingredients in the bowl, add the yeast mixture. Mix 1 low and the rest on high until 2 min after dough has cleaned the bowl. Rest 30 min, punch down. Rest 30 min more. Punch down. Cut into doughnuts, proof 100 F, dry 95 F, wet until over double in size and fry at 360 F until golden brown.
