A: Water (100 F)/60 lb
Butter (melted)/4 lb
配制方法:
Allow to triple in size in bowl. Punch down. Scale into 14 lb pieces. Sheet into a 18 in. X54 in. rectangle. Spot 36 in. with butter and do 3,3 folds with a minimum of 30 min rest between them, under refrigeration. After 3rd fold refrigerate for 8-12 h and then make one final sheeting and sprinkle 36 in. with a mixture of 1 lb of Natural Fruit Mix and 3 oz of flour mixed to dry crumbles with a paddle in a bowl. Do a final three fold and sheet 1/4 to 3/8 in. thick and cut out Croissants. Proof until double in size, spray with egg wash and top with the Fig crumbles made for filling above.
