The percentages of butter fat and milk solids are the same as are contained in fresh milk and cream. If richer milk is desired, add more butter. Be sure to use only sprayprocess milk powder. Heat the batch to 145'F and pass it through a homogenizer. Place an empty and thoroughly clean container beneath the homogenizer for a receiver. To make a chocolate-milk drink, add 3 lb of chocolate liquor or cocoa powder and 7 lb sugar to the formulation for 3.5% milk. A good grade of shortening or other fat may be substituted for the butter with very good results.
