Concentrate the mixture of milk powder and butter with a little water. Add the rest of the water after the mixture has been homogenized. The following amounts are needed to make 400 lb of milk (3.5% butter-fat). 42 lb skim-milk powder, or four times the amount used for 100 lb of milk. 18 lb sweet butter, or four times the amount used for 100 lb of milk. 86 lb of cold water, or same quantity as used for 100 lb of milk. Put together, heat to 145'F, and pass through the homogenizer. To each 15 qt of the homogenized mixture, add 25 qt cold water while the mixture is till hot. Then place it in the refrigerator for cooling.
