Dissolve the milk powder in the cold water. Add the fat to the milk-water mixture in small pieces. Heat to 145'F. If the fat is not dissolved completely, remove the bowl from the heat and stir until dissolved. Check the temperature and if lower than 145'F, apply heat until this temperature is reached. Do not apply heat directly to the mixture. Make a double boiler by placing a smaller bowl inside of a larger bowl that contains water. When ready, pour the mixture through a strainer into the bowl of the homogenizer. Place an empty clean container under the homogenizer for a receiver. Start the machine and pump through the mixture. Cool the finished cream as quickly as possible by placing the container with the cream in a water bath and stirring every 15 minutes until the temperature reaches 50'F. Then place in the refrigerator. Or, place the cream in a refrigerator immediately, and stir it every 15 minutes.
