Dissolve the milk powder in the water and heat them to 110'F. Mix together thoroughly the sugar, dry egg yolk, and gelatin powder and add this mixture to the milk, while stirring continuously. Heat to 145'F, stir vigorously, pour the mass into a homogenizer bowl, and homogenize. Cool immediately by placing the can containing the finished product iin a water bath. Let it stand for 24 hours in order to age; then freeze.
