Invert Sugar Syrup/45 lb Cream of Tartar/3 oz Water/110 lb Granulated sugar/55 lb Thin Boiling Starch/11 lb

Put 50 lb of the water into a candy kettle. Add the granulated sugar and invert syrup, boil. Mix the starch and cream of tartar with the remaining 60 lbs of water. Add this to the boiling sugar and cook all to a heavy sheet. Cast to the desired thickness. This batch should finish to a weight of 128 pounds.
