Soak the gelatin until it is pliable. Dissolve the raw sugar in 2.25 gal of water in a steam pan, then add and dissolve the juice from the broken licorice. Strain this solution to eliminate foreign bodies and lumps. Place the strained solution in a steel stirring cooker, add the corn syrup, and dissolve the soaked gelatin in the batch. Start the cooking and add the flour slowly to allow gradual gelatinization without lumping. continue the cooking until a ball of medium texture is obtained in a cooled test piece. Pass the cooked batch through the licorice refiner to eliminate lumps and then transfer it to the extruding machine. Place the extruded sheets or rods in iron trays in a well-ventilated room.
