Whipped Milk Fudge (Nougat Type)

配方组成:

Vegetable or Soy Albumin/2
Heat to 260'F and add this cooked syrup to a, mixing well. then add
40 lb basic fondant, mixing until the batch becomes plastic and graining
is visible
c: Spray-Process Powdered Nonfat Milk/16
Coconut Oil (M.P. 96'F)/8
Salt/0.5
a: Invert Sugar/20
b: Granulated Sugar/70
corn Syrup/30
Water/15

配制方法:

Melt the coconut oil and add the powdered milk and salt, mixing well before adding this to the batch together with flavor and 20 lb of diced candied fruits.
This nougat-type of fudge may be deposited in the form of peaks or kisses on a special depositor designed to handle plastic candy batches; or, the batch may be filled into boxes lined with waxed paper to form blocks or slabs.
This fudge is frequently referred to as "divinity fudge."
