The approximate yield of each batch will be 172 lb at 60% soluble solids.
Place the berries in a kettle and heat to boiling, while stirring. Add the pectin solution, sugar, and "Sweetose" and heat rapidly to 220'F or approximately 65% soluble solids. Then add the water, stirring well, to reduce the soluble solids back to 60%. This will cause the sweetener to penetrate the fruit and reduce the floating of the berries to a minimum.
Mix in well the color, acid, benzoate of soda, and flavor (if desired), and pack into galss containers.
The pectin solution is prepared by stirring 8 oz of 150-grade rapid-set pectin and 2 lb granulated sugar into 16 lb (2 gal) boiling water.
The red-color solutionn consists of 1.5 oz FDC Red No.1 dissolved in 32 fl oz of hot water.
