The approximate yield of each batch will be 160 lb at 68% soluble solids. Mix the fresh berries with part of the sugar, let this stand, and drain off the juice; for frozen berries, defrost and drain off the juice. Add the "Sweetose" and sugar to the drained juice and heat to 228'F. Then add the drained berries and cook the batch as quickly as possible at 222'F. Cool the batch quickly to about 150'F to prevent floating of berries. Then fill and seal in glass containers; pasteurize at 190'F; and cool rapidly.
