Brown Sugar/50 lb
Place in a kettle and cook rapidly at 228'F
Vanilla or Flavor Blend/To suit
Salt/1 lb

Turn off the heat, and mix in well. Then fill into containers and seal while hot.
the approximate yield will be 118 lb.
Use a medium-yellow or golden-brown sugar (No.8 or No.10 preferred). The product may be used as it is, or 2 oz of melted creamery butter may be added to each quart of the topping, stirring the mixture well before each serving.
For a rum-buttered topping, include some rum flavor in the blend.
