Butterscotch Topping

配方组成:

Sweetened Condensed Whole Milk/2 lb, 8 oz
Dissolve the sugar and salt in the water, add at once to the hot
batch, and mix until smooth; then cook the mixture at 222'F
Butter/1 lb
"Sta-Sol" Lecithin/0.25 oz
Flavor/To suit
bicarbonate of Soda/0.5 oz
"Sweetose"/18 lb
Brown Sugar/2 lb
Salt/2.5 oz
Water (0.5 gal)/4 lb
Water/4 oz

配制方法:

Turn off the heat and mix in well with preceding. Homogenize and fill into glass jars. Seal the containers at 180 to 190'F. The approximate yield will be 26 lb.
Adjust the cooking of the "Sweetose" and milk to obtain the desired color. Use a medium-yellow or goldenbrown sugar (No.8 or No.10) preferred).
