To prepare a batch of approximately 54 lb, soak 1 lb powdered egg albumin in 3 lb of water. Occasionally stir until the albumin is completely dissolved and then introduce the solution into the beater with an 80-qt bowl.
Now add 2 oz salt, 0.25 oz powdered tartaric acid, and 5 lb corn syrup.
Whip the mixture until light and stiff.
Meanwhile, heat 45 lb corn syrup to 230'F. Then gradually add the hot syrup to the mixer, while beating at medium speed. The flow of hot syrup should be adjusted so that the temperature of mix will be about 165'F after all of the syrup has been introduced. Continue beating until the desired consistency is obtained. Add vanilla just before finishing.
