Continue to beat until the desired texture is obtained. Just before finishing, add and stir in well. Pack into containers at once while warm. Approximate yield is 216 lb. Use a high-grade egg albumin, either crystalline or powdered, and dissolve thoroughly before using. Keep the ingredients and machine free from fats at all times. From one eighth to one quarter of the egg albumin may be substituted by gelatinn soaked in cold water (part of the 12 lb listed in the formula) and added with the albumin solution while beating. Adjust the temperature to which the "Sweetose" is heated, so that after the albumin solution is incorporated the temperature of the mix will be about 165'F.
