Hard-Drying Royal Icing
配方组成:
4X or 6X Sugar/1 lb
Cold Water/1 pt
Meringue Powder/4 oz
4X or 6X Sugar/4 lb
配制方法:
First mix the meringue powder and the 1 lb of sugar together in a container, add the cold water, and thoroughly dissolve in a machine kettle. Add the 4 lb of sugar and mix. Add just enough liquid blue to make a brilliant white icing. Place the kettle in the machine, attach the spatula, and beat at low or second speed. When ready, keep covered with a damp cloth. Keep a surplus of dissolved meringue powder on hand in the refrigerator for use as required. No acids are needed with the meringue powder.
