配方组成:
Dextrose/10 lb
Dissolve and add
Gelatin, Type A, 200 bloom/1 lb
Cellulose Gum, CMC-7HSXP/1 lb
Warm Water/13 lb
Salt/8 oz
Sodium Propionate/1 oz
Corn Syrup/10 lb
Total Shortening-syrup/100 lb 1 oz
Icing Sugar/44 lb
Creamed, high-ratio shortening/15 lb
"Starbake-100," Powdered/5 lb, 8 oz
配制方法:
Heat to 150'F. Add 2/3 of syrup to shortening mix, blend in well.
Then mix in balance of syrup. Flavor to taste with vanilla.
