Fruit-Nut Bars
配方组成:
Salt/0.6 oz
Sugar/2.5 lb
Eggs/4 lb
Milk/12 oz
Cake Crumbs/1 lb, 8 oz
Raisins/1 lb
Nuts/12 oz
Cinnamon/0.5 oz
Shortening/1.25 lb
Ammonium Bicarbonate/0.2 oz
Cake Flour/3.75 lb
Soda/1 oz
Molasses/12 oz
配制方法:
Cream the sugar, shortening, molasses, salt, eggs, and cinnamon.
Sift the cake crumbs, flour, and soda together, and add to preceding.
Dissolve the ammonium bicarbonate in the milk, add too preceding mixture and mix until uniform. Finally add the raisins and nuts.
Deposit the strips on sheet pans, flatten, wash with an egg wash or milk and egg, and bake. Cut into bars when cool.
To make the bars, roll the dough into strips of sufficient length to cover a sheet pan. Flatten the strips and, to obtain a glossy surface, apply an egg wash before baking. After baking, allow the cake to cool sufficiently so that the bars can be cut either directly across the pans or at an angle.
