High-Grade Non-settling Custard Pie
配方组成:
"Breadlac"/1 lb, 2 oz
Granulated Sugar/1 lb, 6 oz
Salt/3/8 oz
Nutmeg/1/16 oz
Rub into this the dry mix until smooth
Whole Eggs/2 lb, 4 oz
Water/2 lb, 4 oz
Cornstarch/3 oz
Water/5 lb, 8 oz
Water/1 lb
配制方法:
Stir until smooth and then stir in the cooked starch.
This makes ten 9-inch pies. Fill into shells and bake at 425 to 450'F with strong bottom heat. If there is a flash heat, leave the oven door open. Remove pies before they are entirely set.
For coconut-custard pies, blend equal parts of short-thread coconut and custard mix and deposit 2 to 3 oz of coconut mix in each shell before filling.
