Varying altitudes alter the results in tested formulas. A recipe may give perfect results at sea level and turn out poorly at an elevation of 5,000 feet unless changes are made. The reason for this is that as the altitude increases the atmospheric pressure decreases. As a result, there is a greater expansion of steam and gases in the mix. To balance this, it becomes necessary to reduce the creaming time or the amount of leaven used.
