Dissolve the yeast in the watr. Combine the milk, one half of the sugar, egg yolks, salt, and butter. Add two thirds of the flour and the yeast solution, and mix until smooth. Let this stand about 2.5 hours then add the remaining sugar, flour and the almond extract and mix until smooth. Then combine the cinnamon and walnuts and work these into the dough just enough to distribute them. Place in greased round 9-inch cake pans, 4 inches deep. Brush the batter with beaten egg white and allow it to rise until double in bulk. Bake in slow oven at 325'F, for about 1 hour. Remove, cool, melt the apple jelly, and brush over the cake.
