Salty Icebox Rye Bread
配方组成:
Shortening/4 oz
Dark Rye Flour/4 lb, 8 oz
Whole Caraway Seeds/10 oz
Malt Extract/2 oz
Rye Sour (Optional)/1 lb
Yeast/6 oz
Water/8 lb
First Clear Flour/8 lb, 8 oz
Caramel Color/As desired
Salt/10 oz
配制方法:
Mix thoroughly at 80'F. Ferment to full rise in 2 to 3 hours. Punch and stand 30 minutes. Scale 10-oz pieces (more or less, as desired) and mold into short lengths. Proof 20 minutes; then mold into tight loaves with square ends, 12 to 15 inches long. Proof on mealed boards or pans for only 5 minutes. Then bake on the hearth with much steam, keeping the loaves well spaced to avoid cracking. A further precaution against cracking is to wash the loaves with warm water just before baking. Bake at 400 to 450'F.
This is a popular bread for parties and special occasions. Sliced thin, it makes tasty snacks and provides an excellent base for hors d'oeuvres.
It has long keeping qualities if refrigerated and has an excellent, tangy flavor.
