Dissolve the yeast in some of the water. Place the milk solids, salt, sugar, shortening, eggs, yeast food, mold inhibitor, and the balance of the water into the machine and stir together. Add the flour, then the yeast solution, and mix until a uniform dough is obtained. This dough should have a temperature of 90'F when mixed. Ferment at 80'F. To alter consistency of dough, water may be reduced to 66 or 64 lb.
