On the weight of the fat or oil, 3 to 5% of 130-volume hydrogen peroxide is added and the mixture is then well stirred. Increase in temperature or addition of a little alkali will assist the bleaching action. The fat or oil should be thoroughly purified before bleaching.
As the only byproduct of hydrogen peroxide is water, the clarification of the oil is simple. the use of hydrogen peroxide in food processing is subject to approval by The U.S. Food and Drug Administration.
