Caramel-Fudge Icing
配方组成:
Salt/2.5 oz.
"Sweetex"/1 lb.
Granulated Sugar/5 lb.
"Cinacoa"/8 oz.
Boil to 238'F. and add immediately to the following creamed mass
6X Sugar/15 lb.
"Sweetex"/5 lb.
Water/1.5 lb.
Flavor/To suit
Evaporated Milk/1 lb.
Glucose/1 lb.
配制方法:
Cream light. After adding the syrup, continue mixing until the icing has reached the proper consistency for use (100 to 110'F.). If separation occurs, rewarm and add milk and cream again. Use warm.
