Texas Pecan Cookies (Wire-Cut Machine)

配方组成:

Chopped Fine Pecans/25 lb.
Butter Flavor/As desired
Soda/2.25 lb.
Ammonia/2 lb.
Water (Variable)/40 lb.
"proflo"/5 lb.
Soft Flour/220 lb.
Granulated Sugar/120 lb.
Egg Whites/8 lb.
Invert Syrup/8 lb.
Vanilla Flavor/As desired.
Corn Syrup/10 lb.
Shortening/90 lb.

配制方法:

Cream the sugar, shortening, "Proflo," vanilla, and butter flavors.
Add the egg whites to the creaming mix. Add the corn syrup and invert syrup and then the finely chopped pecans. Separately dissolve the soda and ammonia in the water and add this to the solution. Add the flour and mix until smooth. Bake at about 425'F.
