配方组成:
B: Water/1 qt.
Mix A together and boil to temperature of 242'F. Mix B together in
separate container and beat until very light. Slowly add ingredients in
B to boiled syrup prepared in the first step. Beat until stiff and dry.
FORMULA No.2 (Cold
C: Corn syrup/1 lb.
Granulated sugar/5 lb.
6X sugar/1 lb.
Corn syrup/3 lb***
Meringue powder*/5 oz.
A: Water/1 qt.
A: Meringue powder*/6 oz.
Warm water/1 qt.
C: Mix Step 2 with Step 1
Granulated sugar/1 lb.
B: 6X sugar/5 lb.
配制方法:
Mix A together and beat until light. Add B to A mixture gradually and beat until firm. Add C and beat to desired consistency.
Add the "Veegum T" to the water slowly, agitating continually until smooth. Add B to A with agitation. Add C, mixing until uniform.
