Disperse "Avicel" RC-591 in vigorously agitated water and mix for 5 minutes. Add "Keltrol" to the vortex. Add sugars, starches, fat, lemon juice, and salt and continue mixing for 10 minutes. Allow temperature to reach 190-195'F (agitate constantly) over a period of 3-4 minutes to develop the starch fully. Pack and retort.
