Disperse "Avicel" RC into cold water with agitation. To obtain the desired results, it is necessary that "Avicel" be the first ingredient hydrated. Add nonfat milk solids. Add sweetner. Add cocoa and mix until dispersed. If necessary, add stabilizing or buffering salts. Phosphate and citrate salts have a stabilizing effect upon protein by improving colloidal dispersibility. Disodium phosphate (0.05%-0.10%) is recommended. Use normal processing procedures does not include homogenization, a concentrated dispersion of 5% "Avicel" RC-581 in water may be prepared by the use of a piston homogenizer, Reitz Disintegrator, Beloit mill or Eppenbach colloid mill (0.005 to 0.010 inch clearance).
