Melt "Myvatex" 8-20E emulsifier into the oil. Form an emulsion prior to spray-drying by dissolving or dispersing the dry ingredients in just enough water to maintain the solids in solution and give enough fluidity to the concentrate so that it may be pumped. Homogenize the concentrate in a two-stage homogenizer at 2000 psi first stage and 500 psi second stage. At the spray tower, conditions should be such that the final product will have no more than 1% moisture, have a particle size of 125-150 microns in diameter, and have fat globules no larger than 1-3 microns in diameter.
