The ingredients should be thoroughly premixed. The premixed dry ingredients are mixed by the following schedule with 42% water; 0.25 min at first speed, then 0.5 min at second speed. Allow the dough to rest for 15 min before frying. Fry at 395'F (about 1 min each side). Torutein-94 should be mixed into shortening first, then all other ingredients should be added or alternately rest dry mix for 48 hr. Water absorption may have to be increased 43-44% depending on type of donut machine. Salt level may be changed depending on desired degree of sweetness.
