Disperse "Avicel" RC-591 into hot water with vigorous agitation and mix until smooth and viscous. (5-10 min) Continue heating. Slowly add the blend of pectin and sucrose to the above slurry and mix 5-10 min. Bring to boil and hold for 30 sec. Add C and mix well. Add starch slurry at 190-200'F. Maintain temperature and agitation for 10 min. Add corn syrup. Tare weight to 100% less flavor and acid. Reheat to filling temperature. Add flavor and citric acid. Immediately fill into containers.
