bring water to 60 C (140 F) in mixing vat. blend dry ingredients and add to mixing vat using good mechanical agittion. pasteurize at 71 C (160 F) for 25 min or 79 C (175 F) for 20 s. homogenize at 500- 1000 psi. cool to 4 C (39 F) and fill.
