配制方法:
allow to triple in size in bowl. punch down. scale into 14 lb pieces. sheet into a 18 in. ? 54 in. rectangle. spot 36 in. with butter and do 3,3 folds with a minimum of 30 min rest between them, under refrigeration. after 3rd fold refrigerate for 8-12 h and then make one final sheeting and sprinkle 36 in. with a mixture of 1 lb of natural fruit mix and 3 oz of flour mixed to dry crumbles with a paddle in a bowl. bo a final three fold and sheet 1/4 to 3/8 in. thick and cut out croissants. proof until double in size, spray with egg wash and top with the fig crumbles made for filling above.
