soac oatmeal in water. add yeast and soak for 4-10 min. add all ingredients except walnuts, and mix to development. add walnuts to final stage of mixing until fully incorporated. ferment 1 h. scale into desired weights. rest dough 15-20 min. wash loaves with egg wash and roll in dry oatmeal. make up and proof at 3/4. bake at 400 F (204 C).
