Flavor and color to suit the taste. Varied amounts may be made, but always in the proportion of twice as much sugar as egg whites.
Place sugar and whites in a grease-free mixing bowl. Mix until sugar is well moistened. Then set bowl in pan of simmering water and stir constantly until the mixture reaches 160'F. Remove bowl from water and put back on mixer. Beat at high speed until it becomes just a little warmer than the hand. Add flavor. Make up white pieces first. It is unnecessary to keep the machine running after the icing has reached a peak volume, but it is necessary to whip the icing well each time before filling the bag.
When coloring, keep it on the light side. Excess amounts will break down the icing. If a deeper color is desired, the pieces may be touched up with a medium stiff brush, after they are thoroughly dried. The brush must not be too damp or the pieces will become shiny, spoiling the entire effect. Proper shading will add new beauty and depth.
