Flavor, color, and acidulant added as additional percent after totaling main ingredients to 100. For laboratory evaluations, prepare a 2,400 to 2,500-gram batch using above percentages. Heat over high gas fire to 300-305'F with occasional stirring. At 300-305'F, pour onto Teflon-coated table (no cooling necessary). Slab and sprinkle with acidulant. Fold and knead. Spread and add flavor followed by additional folding. Cool as needed. Pass through formation roll (using, for example, a direct feed automatic horizontal drop roll-a "Brock Cutter"). Cool slightly and break. Screen as needed. Package after conditioning.
