Measure water into boiling kettle. Water temperature may be 10-70'C. Add sodium citrate and citric acid and dissolve. Dry-blend ingredients under (B) and add to the water while stirring. Heat slowly while stirring. Boil for 2 minutes to ensure complete dissolution of the pectin. Add sucrose (C) gradually to avoid too heavy cooling of the batch and dissolve by boiling. Add glucose and invert sugar syrup. Boil to 76-78% soluble solids. Add color and flavor.
