In preparation for coating, the dried fruit, such as raisins, is usually washed in hot water for cleaning and removal of surface sugar. After the water has evaporated, a dip or spray coating of "MYVACET" 7-00 is applied to the warm fruit. A dip of 5 to 10 seconds in a bath of "MYVACET" material held at 220 to 250'F (104 to 121'C) is suggested for initial experimental work. Applications below 1 percent, based on the fruit weight, have been found effective. Surface Lubricant. Combinations of "MYVACET" 7-00 with 10 to 15 percent "MYVACET" 9-40 give effective release coatings at levels of 0.35 to 0.60 percent of the fruit weight. These coatings are best applied by spray at a temperature above their melting point, with the tumbling fruit at room temperature or slightly above. MYVACET 9-40 sprayed on dates and raisins at a 0.25 percent level reduces their stickiness to permit easier handling in automatic equipment.
