"MYVAPLEX" 600 is an effective starch-complexing agent for cereals. It aids in the cooking and drying phases of processing by reducing stickiness and clumping. Also, by reducing gelatinization and pastiness, it improves the texture and flavor of finished hot cooked cereals when they are subjected to prolonged warming such as occurs on restaurant steam tables. "MYVAPLEX" 600 can be added by means of aqueous dispersion. Suggested additon level: 1.0 percent of the dry cereal weight.
