By Hot/Cold Technique: Prepare 2% solution of Methocel by hot/cold technique. Sift dry ingredients together. Mix milk, vegetable oil, and 2% solution of Methocel; add to dry ingredients. Mix gently until smooth. Dry food thoroughly; optional, coat with flour or batter predust. Dip into batter allowing excess to drain off. Fry at 375 F. By Dry Blending Technique: Add Methocel (0.2% by wt.) to the dry ingredients and stir blend 3 min at low speed. Mix milk, water (10.8% by wt.) and vegetable oil; add to dry ingredients. Mix gently until smooth.. Dry food thoroughly; optional, coat with flour or batter predust. Dip into batter allowing excess to drain off. Fry at 375 F.
