Using aplanetary mixer with paddle attachment, disperse Avicel CL-611 MCC. Add xanthan gum. Mix until smooth, about 5 min. Add starch slurry and mix well. Combine oil and polysorbate 60. Add in a slow, continuous stream. Mix 10 additional min. Add spice blend and sorbitol solution. Mix 5 min. Add vinegar and mix 5 min. Homogenize at 2000/500 psi.
