Formula No.1 will give a hard candy drop. Formula No.2 will give a hard candy drop if the arabic content is low and a soft drop or jujube if the arabic content is high. Formula No.3 gives a jujube product. The greater the percentage of arabic, the softer and more chewable the candy. Add sufficient water to dissolve all the ingredients and pressure cook to 380'F. Then cast drops in mold and cool. the final concentration of water will have to be regulated to a low concentration (5 to 10%) for rapid drying of the candy. If pressure cooker is not available, then the water content has to be adjusted by boiling sorbitol (70% solution) and mannitol to drive off the water and then adding the gum arabic and other ingredients before casting. If foam is a problem, a trace of food grade anti-foam can be used.
