Heat to 105 F on double boiler, stirring constantly. Beat with wire whisk to medium peak; by hand, fold in very lightly (to avoid overmix) 7.5 lb 6 x granulated sugar, 3 lb of toasted cake crumbs (run through sieve); 5 lb^2 of ground walnuts and 2 oz vanilla. Bag to size of quarter. Bake in cool oven at 325 F until lightly colored.
