Blend Part A dry ingredients. Add Part A ingredients slowly to water, using high shear agitation, until uniformly dispersed, approximately 2-3 min. Next add vinegar and lemon juice to the above mixture and incorporate thoroughly. Add oil and polysorbate 60 (Part C ingredients). Incorporate thoroughly, about 5 min mixing. Mixing speed may need to be increased. Heat mixture to pasteurization. Homogenize at 1000 psi, single-stage homogenizer. Package aseptically. Note: Maltrin M040 allows the oil level to be lowered very significantly. This formulation has 1.5 calories/gram. This formulation has one-half the calories and one-quarter of the oil level of a standard salad dressing.
