Pills, candy, or foods which have a fatty or hydrophobic surface are difficult to coat with sugar from a water solution. The application of a thin (monomolecular) coating of "Aldo" 33 (glyceryl monostearate) to the product before coating with the sugar solution, or other hydrophilic substance promotes adhesion. It is suggested to dissolve 50 parts of "Aldo" 33 in 10 parts of alcohol and to apply at 50'C. This forms a thin coating after air drying the coated product, which is then coated with 1% gelatin in sugar syrup. This can then be coated further with a mixture of 1 part talc and 9 parts powdered sugar. This method may be used in the pharmaceutical, candy, and food industries, such as coatings for pills, vitamins, nuts, and chewing gum. It will also be suitable for sugar coating shredded coconut and sugarcured meats.
