The approximate yield will be 365 lb. Blend all the dry ingredients together well to prevent lumping. Add sufficient water to the dry ingredients so as to form a heavy paste and stir together until smooth. Then add the remaining water and "Sweetose." Heat the mixture, while stirring, to a good boil. Then turn off the heat, add the flavor, and mix in well. Homogenize at once to insure a smooth product. Then fill and seal in containers at 180'F. Invert the containers at once to sterilize the caps. Then cool quickly to near 100'F. in a cooling tank or spray. NOTE: Select the cocoa for color and flavor. A blend of natural (or breakfast) and dutched cocoas is recommended. Be sure the mixture is being stirred while bringing to a boil. The salt and flavor may be varied to suit.
