To make a stiff but nonsticky paste. Take out of bowl and knead for two minutes. Roll in circle about 1/2 in. thick. Put on a plastic sheet. This is placed between cover and pan or pot to keep in volatile flavors and aromatics. This is also used for baking chicken in clay---wrapping the fowl and sealing it into Bakers' clay.
