配方组成:
Coconut oil (92'F melt point)/20.000
"Avicel"-RC/1.200
Sucrose/12.000
"Tween" Mos 280/0.166
Water oil/65.101
"Tween" 65/0.033
Sodium Caseinate/1.500
配制方法:
Disperse Avicel-RC in water, start heat.
Add sucrose and caseinate.
Heat combined emulsifiers and fat, then add to mix.
Pasteurize and homogenize @ 1500 psi (105 kg/sq cm).
Cool rapidly.
Flavor using combined ingredients below 1 volume "Stabilac" No.2 2. volumes Imitation Butter Flavor
