nonalcoholic extract, etc.
Water/To make 100 gal.
Foamy Caramel Color/2 gal. 96 oz.
Granulated Sucrose/685 lb.
^1 Sodium Benzoate Solution
20 oz. sodium benzoate dissolved in sufficient water to make 1 gal.
Sodium Benzoate Solution^1/100 oz.
1 oz. sodium benzoate solution will preserve 1 gal. of syrup, emulsion,
"Flex-Sol" Root Beer Concentrate F-1233/20-25 oz.
配制方法:
The amount of sugar indicated in the formulae will give approximately a 34'Be. syrup which is recommended for household use. For fountain use, a 32'Be. syrup, made by using 630 lb. granulated sucrose, is recommended and for vending machines, a 29 to 30'Be. syrup, made by using 565 lb. sucrose, is desirable. Citric acid is the usual acidulant, while tartaric acid is generally used for grape drinks. the market price, however, is very often the deciding factor. One ounce of 50% tartaric acid solution will replace 1.75 oz. of 50% citric acid solution.
The better grades of refiner's syrups and small amounts of corn or malt syrups may be used for sweetening, where price is a prime consideration.
Additional cloud may be obtained in the citrus drinks by the addition of "Flex-Sol" Cloud TR-58-1.
The sodium benzoate solution may be eliminated if the syrups are packed sterile.
